Masterfully prepared on the Big Green Egg from Wassis Meats made with locally raised grass fed beef from Palm Bay. Thank you Destination Brevard!

Made a rub of: Smoked Paprika, garlic powder, Adobo, cracked black pepper, kosher salt and brown sugar. Remove skin from pork belly and retain Rub the pork belly, wrap in cling wrap and refrigerate overnight. Placed pork belly on the middle rack of my Masterbuilt electric smoker at 210 deg. Added the pork skin on the shelf above and smoked with cherry wood for 3 hours, Removed from smoker, coated liberally with Smack Down Sauce and finished on 700 deg. grill, Served on slider buns for the win

n a large bowl, add the beef. Sprinkle evenly with the Worcestershire sauce, seasoning salt, garlic powder, smackdown sauce and pepper. Use your hands to mix the ingredients until they are just combined. Place the burgers on the grill. Cook 4-5 minutes on the first side. Flip the burgers over and cook an additional 4-5 minutes, until the burgers have reached the desired doneness.*
